Coconut Cream Latte
Guys, I've had a busy morning. I was up at the crack of dawn getting myself and my kids ready for our long day ahead. Whenever I chat with other parents who have school-aged kids (or kids in daycare), mornings come up as a unanimous killer. Most of us leave the house looking and feeling dishevelled and hungry.
This latte is my solution to long Monday mornings. It's creamy, sweet (if you like sweet) and SO filling. It's a take on the traditional Bulletproof Coffee - the awesome pairing of caffein with fat that can keep you going for hours without feeling hungry.
Try this coffee as your morning brew or have one in the afternoon to get you through that three o'clock slump (decaf works just fine here!). I also like it as a post workout drink, adding a bit of chocolate protein powder if I've been lifting weights.
Coconut Cream Latte
- Brewed coffee (enough for one mugful)
- 1 -2 tsp coconut oil
- 1 tbsp coconut cream (just get yourself a good can of coconut milk and scoop the cream off the top)
- Sweetener to taste (stevia or monk fruit will make this keto friently, honey, maple syrup or coconut sugar will make it paleo friendly).
- Combine all ingredients in a blender or heat proof measuring cup
- Blend on high for a few seconds, until it becomes frothy and smooth
Optional Add-Ins
- Cocoa powder or chocolate protein powder (half scoop)
- Vanilla extract
- Cinnamon
- Collagen or gelatin powder (here's a good collagen and here's a good gelatin)
- Grass fed butter or ghee (to make it a true bulletproof)
