Quick Mocha Breakfast Slushy
It does not matter what time of year it is, I just love all things frozen & creamy. This breakfast slushy is full of fat, protein and fibre to keep you going until well after lunch!
Quick Mocha Breakfast Slushy
Makes one big or two small
- 2 tbsp whole chia seeds + 3 tbsp water
- 6 - 8 ice cubes
- 1/2 can full fat coconut milk
- 1/4 cup brewed coffee
- 1/2 tsp vanilla
- 2 tsp maca powder (great for morning energy!)
- 1 scoop of your favourite chocolate protein powder
- Start by combining the chia seeds with the 3 tbsp of water and set aside to soak while you prep your remaining ingredients (8 mins)
- Place the remaining ingredients into a good blender
- When the chia seeds have absorbed most of the water and have become gelatinous, place them into the blender
- Blend away until smooth, creamy and slushy
- Enjoy right away or pop the smoothie into the freezer for a few minutes if you prefer a more frozen slushy
